For The Love Of Honey Mustard Chicken.

My brother and his wife recently bought a new cooker, and like many Kenyans, the oven became a storage space for pots and pans. Now, my sister in law once she has something brand new, she gets excited about what she has bought. With the cooker she was eager to try out new recipes.

So i suggested that we get the pots out of the oven and we use it to bake something.

I pulled out one of my favourite chicken recipe, Honey mustard chicken. You don’t have be a culinary fundi to make it. In fact the ingredients are easily available and can be pronounced.

prep time: 10 Min

rest chicken for 20 mins

cook time : 40 mins

Total time: 1 hour 20 mins

servings 4

INGREDIENTS

  1. 4 pieces of chicken thighs
  2. 1 cup of honey
  3. 1/4 cup of yellow Mustard
  4. 1 sprig of rosemary
  5. 5 garlic gloves
  6. 2 table spoons of dark soy sauce
  7. 1/4 of cooking oil
  8. salt and black pepper
  9. 1 teaspoon of paprika
  10. 1 bunch of curly or flat fresh parsley

METHOD

  1. Preheat your oven at 180°C
  2. Blend all the ingredients from 2-10 in a blender
  3. Pour the mixture on the chicken thighs and mix well
  4. let it rest for 20 mins
  5. Put on a baking tray and bake in the oven for 40-45 mins until cooked inside,
  6. serve with roasted potatoes and spinach

So if you are one of those that are using your oven as a storage space, get your pans and pots out of the oven and get baking.
