What of after Christmas-Red Lentil Stew
December is a time where people go all out on eating. Its the one month where a silent rule of eating is broken, (eat with no limits). Lots of invitations to lunches, dinners and barbecues. Then comes January where were we make resolutions about living a healthier lifestyle.
After December the invitations stop, However this January I had to host a family meeting, I had no clue as to what I would cook, because one we have over eaten in December, especially meat and other delicacies. Given a choice I would have made tea and sweet potatoes. I needed to find a well balanced meal that people can enjoy. I spoke to one of my sisters trying to come up with a simple meal and an idea came,( it helps to ask what can I cook?)
This is a simple red lentil stew that is amazing, healthy and delicious. ENJOY.

serves: 8-10
INGREDIENTS
4 medium onions chopped
2 Medium tomatoes chopped
I small packet of tomato paste
1 bulb of garlic crushed
1 packet of red lentils
250ml coconut cream
500g minced meat
salt and black pepper
Dhania.
METHOD.
- Wash the red lentils twice, and soak in water for 30 mins
- Boil the lentils until it becomes soft.
- Fry the onions til they are transparent, add garlic and stir for 5 mins
- Add in the chopped tomatoes, tomato paste, salt and black pepper, cover for 5 mins.
- Add in the minced meat and cook for 15 mins
- Pour in the red lentils and coconut cream
- let the stew cook for 10 mins ( if you see the mixture is becoming thick, add two glasses of water) the idea is for it to be stew.
- add dhania
- serve with cumin rice and steamed cabbage
PS: I didn’t have any leftovers, all was eaten.
